Easy Cookies and Cream Ice Cream
If you happen to be an ice cream afficianado, cookies and cream ice cream may be a favorite, especially after you learn how to make this really simple version.
Having owned an ice cream shop for a few years, sometimes we needed to replenish our supply of ice cream in a pinch if we ran out on a hot weekend. You can do this at home and have a wonderful dessert that your friends and kids will rave about.
All you need is one half gallon of good quality vanilla ice cream, a mixing bowl and a package of Oreo Cookies. Leave the ice cream out of the freezer so it gets soft, but not liquid.While you are waiting for the ice cream to soften, put half of the package of Oreo’s into a plastic bag and crunch them with a rolling pin or hammer. You do not want to make them into crumbs, just break them into pieces.
When the ice cream is soft, put it in a mixing bowl and add the cookies. Mix lightly. If you over mix, the ice cream will become dark from the cookie crumbs. You want to maintain a swirl of the cookie through the ice cream. Immediately cover with plastic wrap and put back in the freezer. Let the ice cream harden, this may take an hour or two depending on how cold your freezer is.
Serve with hot fudge for an Oreo sundae or just enjoy it as is!
